Ingredients
10 puff pastry sheets, 4-inch squares
8 to 10 ounces sliced mushrooms
1 finely chopped shallot
3 minced garlic cloves
1/3 cup chopped fresh parsley or 1 tablespoon fresh thyme
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
4 to 6 ounces goat cheese, room temperature
1/4 teaspoon each of sage, thyme, rosemary, salt, and pepper
1/4 cup white wine or 1 tablespoon brandy
1 whisked egg for egg wash
Optional: 1 tablespoon butter, 1 tablespoon honey
Instructions
1. Preheat oven to 375–400°F (190–200°C) and line baking sheets with parchment paper.
2. Poke puff pastry squares with a fork to minimize puffing or score edges if using one large sheet.
3. Heat olive oil in a skillet. Sauté shallots and garlic for 1-2 minutes. Add mushrooms, cook for 4-5 minutes.
4. Add white wine or brandy, cook until mostly evaporated. Season with salt, pepper, and herbs.
5. Mix goat cheese with Parmesan and parsley or thyme. Add honey if desired, mix until creamy.
6. Spoon mushroom mixture onto puff pastry squares or spread goat cheese and layer mushrooms on a large sheet.
7. Pinch pastry edges decoratively and brush with egg wash.
8. Bake for 20-30 minutes until golden and puffed.
9. Cool slightly before serving. Garnish with fresh herbs.
