1/2 pound ground beef chuck, 85% lean
1/2 pound ground pork
1/4 cup grated Parmesan cheese
1/4 cup heavy cream
1 large egg, beaten
2 tablespoons minced fresh parsley
1 tablespoon finely grated onion
1 clove garlic, grated
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Optional binder: 1/2 cup almond flour or crushed pork rinds
Optional: 1 teaspoon Italian seasoning

Instructions

1. Combine ground beef and pork in a medium bowl.
2. Add Parmesan, heavy cream, beaten egg, parsley, onion, garlic, salt, and pepper.
3. Add optional almond flour or pork rinds if using.
4. Mix gently until ingredients are combined.
5. Let the mixture rest in the refrigerator for 1-2 hours.
6. Form the mixture into 12 meatballs.
7. Cook using preferred method (pan fry, oven bake, or slow cook).
