1 pound (about 450g) cod fillet or cod loin, cut into 8 pieces (fresh or thawed frozen)
1 cup panko bread crumbs
1 teaspoon garlic powder
1 teaspoon paprika
3/4 teaspoon salt
1/2 teaspoon Italian herbs (optional)
2 eggs
1 teaspoon oil (such as olive oil or avocado oil) for brushing or spraying
Optional: lemon slices or wedges for serving

Instructions

1. Pat the cod dry thoroughly with paper towels to ensure the coating sticks well.
2. Crack eggs into a pie pan and lightly beat them.
3. In a shallow bowl, combine panko bread crumbs, garlic powder, paprika, salt, and Italian herbs. Mix well.
4. Preheat the air fryer to 400°F (200°C) for 5 minutes.
5. Dip each cod piece first into the beaten eggs, then press both sides into the bread crumb mixture to coat evenly. Set coated pieces aside on a plate.
6. Lightly brush or spray the air fryer basket with oil to prevent sticking.
7. Place the coated cod pieces in a single layer in the air fryer basket, avoiding overcrowding.
8. Cook at 400°F for 15 minutes, checking around 10 minutes. Optionally, spray or brush additional oil for extra crispiness. Cook until the coating is golden and crispy and the fish reaches an internal temperature of 145°F (63°C).
9. Remove from the air fryer and serve immediately with lemon wedges or your choice of dipping sauce.
