4 ounces (113 g) diced green chilies or 1 can (10 oz/280 g) tomatoes with green chilies
1 can (15 oz/425 g) nacho cheese sauce or cheese sauce alternative
5.6 ounces (160 g) or about 1 package Mexican style rice mix, or 2 cups cooked rice
3 cups (about 340 g) shredded cheese blend (e.g., Colby Jack, Mexican blend, cheddar)
3.5 ounces (100 g) tortilla strips or crispy element like sautéed bell peppers
1 cup (240 g) sour cream, reduced-fat if preferred
8 to 10 burrito-size flour tortillas (10-inch preferred)
2 to 3 tablespoons olive oil or cooking oil, for pan frying
Instructions
1. In a large skillet over medium heat, cook the ground beef, onions, and seasonings until beef is browned and onions are soft, about 7-10 minutes.
2. Add garlic and green chilies or tomatoes with chilies; cook another 2 minutes. Drain excess fat if necessary.
3. Stir in taco seasoning and water. Simmer on low for 5 minutes until flavors meld.
4. Cook rice according to package instructions or prepare 2 cups of your favorite seasoned rice.
5. Warm the nacho cheese sauce in a small saucepan.
6. Briefly microwave tortillas to make them pliable.
7. To assemble, add beef mixture on each tortilla, layer with rice, cheese sauce, shredded cheese, sour cream, and tortilla strips.
8. Fold tortillas by tucking in sides and rolling tight.
9. Fry assembled burritos seam-side down in heated oil until sides are golden and crispy, 3-5 minutes per side.
10. Serve hot with optional sides of guacamole or salsa.
