Ingredients
2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
1 tablespoon extra virgin olive oil
1 teaspoon paprika
1 teaspoon garlic powder (plus optional additional for sauce)
1 teaspoon kosher salt (divided as needed)
½ teaspoon black pepper (divided as needed)
½ teaspoon cayenne pepper (optional, for extra heat)
Bang Bang Sauce:
1 to 1¼ cups mayonnaise or full-fat Greek yogurt
⅔ to ¾ cup Thai sweet chili sauce
2 to ¼ cup Sriracha
2 tablespoons honey
1 tablespoon apple cider vinegar or lime juice
1 tablespoon soy sauce
Optional: 1 to 2 teaspoons garlic powder or 2 minced garlic cloves
Other:
Wooden skewers, soaked in water for at least 20-30 minutes
Fresh parsley for garnish (optional)
Instructions
1. In a large bowl, combine chicken cubes with olive oil, paprika, garlic powder, salt, black pepper, and optional cayenne pepper. Mix well to coat the chicken evenly.
2. Thread chicken pieces onto soaked skewers.
3. In another bowl, whisk together mayonnaise (or Greek yogurt), Thai sweet chili sauce, Sriracha, honey, apple cider vinegar (or lime juice), soy sauce, and optional garlic to create the bang bang sauce.
4. Reserve half of the sauce for serving. Use the other half to brush or toss over chicken skewers.
5. Choose a cooking method:
– Air Fryer: Cook at 400°F (204°C) for 11-15 minutes, turning halfway, until chicken is cooked to 165°F (74°C).
– Oven: Bake at 400°F (205°C) for 20-25 minutes, flipping halfway through, then brush with reserved sauce.
– Grill: Grill on medium-high for 8-20 minutes, turning and brushing with sauce, until chicken reaches 165°F (74°C).
6. Brush cooked skewers with reserved sauce and garnish with parsley if desired. Serve immediately.
