2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

Bang Bang Sauce:
1 to 1¼ cups mayonnaise or full-fat Greek yogurt
⅔ to ¾ cup Thai sweet chili sauce
2 to ¼ cup Sriracha
2 tablespoons honey
1 tablespoon apple cider vinegar or lime juice
1 tablespoon soy sauce
Optional: 1 to 2 teaspoons garlic powder or 2 minced garlic cloves
Other:
Wooden skewers, soaked in water for at least 20-30 minutes
Fresh parsley for garnish (optional)
Instructions
1. In a large bowl, combine chicken cubes with olive oil, paprika, garlic powder, salt, black pepper, and optional cayenne pepper. Mix well to coat.
2. Thread 3-5 pieces of chicken onto each soaked skewer.
3. In a separate bowl, whisk together mayonnaise (or Greek yogurt), sweet chili sauce, Sriracha, honey, cider vinegar (or lime juice), soy sauce, and optional garlic to make the sauce. Reserve half for serving.
4. Brush the other half of the sauce over the chicken skewers.
5. Cooking Options:
– Air Fryer: Cook at 400°F (204°C) for 11-15 minutes, turning halfway.
– Oven: Bake at 400°F (205°C) for 20-25 minutes, flipping once.
– Grill: Grill on medium-high for 8-20 minutes, turning frequently.
6. After cooking, brush skewers with reserved sauce and garnish with parsley if desired. Serve immediately.
