3 tablespoons honey or 2 to 3 teaspoons maple syrup (adjust sweetness to taste)
1 large egg
4 slices brioche or thick soft bread (white, sourdough, whole grain options also work)
¼ cup blueberries (or other fresh fruit such as strawberries, raspberries, blackberries)
Optional: ¼ teaspoon vanilla extract or vanilla bean paste, pinch of cinnamon or nutmeg
Powdered sugar for dusting or additional honey/maple syrup drizzle for serving
Instructions
1. Preheat the air fryer to 350°F (180°C) or the oven to 350-400°F (180-200°C).
2. In a bowl, whisk together the Greek yogurt, honey (or maple syrup), egg, and optional vanilla or spices until the mixture is smooth and custard-like.
3. Press the center of each bread slice gently to create a shallow well, being careful not to cut through the edges.
4. Spoon the yogurt custard evenly into the wells of each bread slice.
5. Top with fresh berries or preferred fruit toppings.
6. For air fryer: Cook at 350°F for 4 to 10 minutes (depending on bread thickness and appliance), until the custard is set and edges begin to caramelize. For oven: Place the toasts on a parchment-lined baking sheet and bake for 10 to 21 minutes until custard is firm and golden.
7. Allow to cool for 10 to 20 minutes for custard to fully set before serving. Optionally, dust with powdered sugar or drizzle extra honey or syrup.
